- Basmati rice2.5 cups
- Sweet potatoes1 large
- Carrots2 medium
- Cauliflower1/2 head
- Onion1 large
- Garlic4 cloves
- Vegetable broth3.5 cups
- Olive oil1/2 cup
- Spices (cumin, coriander, paprika, cinnamon, ginger)2 tbsp total

- Pomegranate seeds1/4 cup
- Fresh mint leaves2 tbsp, chopped

Cut lamb into cubes. Marinate with olive oil, spices, salt, and pepper for at least 30 minutes.

Peel and cube sweet potatoes and carrots. Cut cauliflower into florets. Toss vegetables with olive oil, salt, pepper, and spices. Roast at 200°C (400°F) for 25-30 minutes until tender and slightly caramelized.

While vegetables roast, brown the marinated lamb in a pot. Add sliced onion and minced garlic, sauté until softened.

Rinse basmati rice until water runs clear. Drain well.

In a deep pot, arrange the roasted vegetables at the bottom. Layer the browned lamb and sautéed onions on top.

Spread the rinsed rice over the lamb and vegetables. Season with salt and pepper.

Pour in the vegetable broth. Bring to a boil.

Reduce heat to low, cover tightly, and simmer for 25-30 minutes, or until rice is cooked and liquid is absorbed.

Let the pot rest, covered, for 10 minutes off the heat.
