- Jasmine rice, cooked and cooled4 cups
- Chicken breast, diced1 cup
- Garlic, minced2 cloves
- Shallots, thinly sliced2
- Sambal terasi (shrimp paste chili sauce)2 tbsp
- Sweet soy sauce (kecap manis)2 tbsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Eggs, for frying4
- Spring onions, chopped (for garnish)2
- Fried shallots (for garnish)2 tbsp

Heat vegetable oil in a wok or large skillet over medium-high heat. Add diced chicken and stir-fry until cooked through. Remove chicken and set aside.

Add minced garlic and sliced shallots to the wok. Stir-fry until fragrant, about 1 minute.

Add the sambal terasi and stir-fry for another minute until the oil separates slightly.

Add the cooled cooked rice to the wok. Break up any clumps and stir-fry to combine with the sambal mixture.

Return the cooked chicken to the wok. Pour in the sweet soy sauce. Season with salt and black pepper to taste. Stir-fry until everything is well combined and heated through.

While the rice is finishing, fry the eggs sunny-side up.
