- Cooked rice (day-old)4 cups
- Sambal oelek or chili paste2-3 tbsp
- Garlic2 cloves
- Eggs2
- Cooked chicken or shrimp (optional)100g
- Kecap manis (sweet soy sauce)2 tbsp
- Vegetable oil1.5 tbsp
- Saltto taste
- Fried shallotsfor garnish

Mince garlic. If using cooked chicken or shrimp, chop into bite-sized pieces.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and stir-fry until fragrant.

Add the sambal oelek or chili paste and stir-fry for 30 seconds.

Add cooked chicken or shrimp (if using) and stir-fry briefly.

Push ingredients aside, pour in beaten eggs, and scramble. Mix everything together.

Add the cooked rice and stir-fry, breaking up clumps.

Pour in kecap manis. Stir well to coat the rice evenly.

Season with salt to taste. Stir-fry for another 1-2 minutes.
