- Cooked rice (day-old preferred)4 cups
- Cooked chicken (rotisserie or leftover)2 cups, shredded
- Garlic, minced2 cloves
- Onion, finely chopped1/2
- Sweet soy sauce (kecap manis)3 tbsp
- Soy sauce1 tbsp
- Vegetable oil2 tbsp
- Eggs4
- Saltto taste
- Black pepperto taste
- Frozen peas and carrots1/2 cup
- Scallions, choppedfor garnish

Heat vegetable oil in a wok or large skillet over medium-high heat. Sauté minced garlic and chopped onion until softened.

Add the cooked rice and shredded chicken. Stir-fry for 2-3 minutes until heated through.

Add frozen peas and carrots. Continue to stir-fry until vegetables are tender-crisp.

Pour in the sweet soy sauce and soy sauce. Season with salt and black pepper. Stir-fry until everything is well combined and slightly browned.
