- Coconut milk1.5 cups
- Pandan leaves3-4 leaves, tied in a knot
- Water1 cup
- Salt1 tsp
- Anchovies (ikan bilis)1/2 cup, for sambal
- Dried chilies10-15, soaked
- Shallots3-4, chopped
- Garlic2 cloves, chopped
- Belacan (shrimp paste)1 tsp, toasted
- Tamarind paste1 tbsp
- Sugar1 tsp
- Oil2 tbsp, for sambal
- Fried anchovies1/4 cup, for garnish
- Roasted peanuts1/4 cup
- Hard-boiled eggs4
- Cucumber1/2, sliced
- Fried chicken wing (optional)4

Rinse jasmine rice thoroughly. Drain.

In a pot or rice cooker, combine rice, coconut milk, pandan leaves, water, and salt. Stir well.

Cook the rice according to your rice cooker's instructions or on the stovetop until done. Fluff with a fork.

Prepare the sambal: Blend soaked dried chilies, shallots, garlic, and belacan into a paste. Heat oil in a pan and sauté the paste until fragrant and oil separates.

Add tamarind paste, sugar, and a pinch of salt. Cook for a few more minutes. Set aside.

Assemble the Nasi Lemak: Place a portion of the fragrant rice on a plate, traditionally lined with a banana leaf. Add a spoonful of sambal, fried anchovies, roasted peanuts, a hard-boiled egg, and cucumber slices. Add fried chicken if using.
