- Peas (frozen or fresh)1/2 cup

- Onions1 medium
- Garlic cloves2
- Ginger1/2 inch piece
- Vegetable oil3 tbsp
- Cumin seeds1 tsp
- Coriander seeds1 tsp
- Cardamom pods2
- Turmeric powder1/2 tsp
- Vegetable broth or water3 cups
- Saltto taste
- Black pepperto taste
- Fresh cilantrofor garnish

Rinse the basmati rice and soak for 15 minutes. Drain.

Dice carrots, bell pepper. Chop onion, mince garlic and ginger.

Heat oil in a pot over medium heat. Add cumin seeds, coriander seeds, and cardamom pods. Toast for 30 seconds.

Add chopped onion and sauté until softened. Add minced garlic and ginger, cook for 30 seconds.

Add diced carrots and bell pepper. Cook for 5 minutes until slightly tender.

Stir in turmeric powder, salt, and pepper.

Add vegetable broth or water and bring to a boil.

Add the drained rice and peas. Stir, bring back to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until rice is cooked and liquid absorbed.
