- Jasmine rice2 cups
- Coconut milk1.5 cups
- Pandan leaves2-3, knotted
- Salt1 tsp
- Water1 cup
- Sambal Ikan Bilis1/2 cup
- Fried anchovies (ikan bilis)1/2 cup
- Roasted peanuts1/2 cup
- Hard-boiled eggs4, halved
- Banana leaves or wax paperfor wrapping

Rinse rice thoroughly. In a pot or rice cooker, combine rice, coconut milk, pandan leaves, salt, and water. Cook until rice is done and liquid is absorbed.

Once cooked, remove pandan leaves and fluff the rice gently. Let it cool slightly.

Prepare the accompaniments: ensure sambal is ready, anchovies are fried, peanuts are roasted, and eggs are hard-boiled and halved.

Lay out pieces of banana leaf or wax paper. Place a portion of the coconut rice in the center of each.

Add a spoonful of sambal, a sprinkle of fried anchovies, roasted peanuts, and half a hard-boiled egg onto the rice.
