- Chicken pieces (wings, drumettes, thighs)1.5 kg
- Cornstarch1 cup
- All-purpose flour1/2 cup
- Garlic powder1 tsp
- Ginger powder1/2 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Vegetable oil for frying4 cups
- Water1/4 cup

Cut chicken into serving pieces if necessary. Pat dry thoroughly.

In a bowl, combine cornstarch, flour, garlic powder, ginger powder, salt, and pepper.

Add water to the dry ingredients and mix to form a thin batter. It should be watery, not thick.

Coat each piece of chicken evenly with the batter.

Heat vegetable oil in a deep pot or wok to 325°F (160°C).

Carefully add chicken pieces to the hot oil, ensuring not to overcrowd the pot. Fry for about 8-10 minutes until lightly golden.

Remove chicken from oil and let it rest on a wire rack for 5-10 minutes.

Increase oil temperature to 350°F (175°C).

Re-fry the chicken in batches for another 3-5 minutes until deeply golden brown and very crispy.
