- Chicken thighs, boneless, skinless700g
- Pre-made Balinese spice paste (Bumbu Dasar Merah)150g
- Coconut milk200 ml
- Kaffir lime leaves2-3
- Lemongrass1 stalk, bruised
- Saltto taste
- Black pepperto taste

Cut chicken thighs into bite-sized pieces.

Heat vegetable oil in a pan or wok over medium heat. Add the pre-made spice paste and sauté until fragrant, about 3-5 minutes.

Add the chicken pieces and stir-fry until they are no longer pink on the outside.

Add the bruised lemongrass stalk and kaffir lime leaves. Pour in the coconut milk and stir well.

Bring to a simmer, then reduce heat to low and cook for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.
