Bahan
- Chicken thighs, bone-in, skin-on1 kg
- Honey100 ml
- Soy sauce50 ml
- Garlic, minced4 cloves
- Ginger, grated1 tbsp
- Chili padi, sliced (optional)2-3
- Shallots, sliced2 medium
- Lemongrass, bruised1 stalk
- Star anise1
- Cinnamon stick1 inch
- Vegetable oil2 tbsp
- Water100 ml
- Saltto taste
- Black pepperto taste
- Cilantro, for garnisha few sprigs

Marinate chicken pieces with salt and black pepper.

Heat vegetable oil in a wok or large pan over medium-high heat. Sear chicken pieces until golden brown on all sides. Remove chicken and set aside.

Add sliced shallots, minced garlic, and grated ginger to the pan. Sauté until fragrant.

Add lemongrass, star anise, and cinnamon stick. Stir for 30 seconds.

Return chicken to the pan. Pour in honey and soy sauce. Add water.

Bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes, or until chicken is cooked through and the sauce has thickened.

If using, add sliced chili padi in the last 5 minutes of cooking.

Adjust seasoning with salt and pepper if needed. The sauce should be thick and glossy.
