  • Candlenuts3
  • Coriander seeds1 tbsp
  • Cumin seeds1 tsp
  • Shrimp paste (belacan)1 tsp
  • Tamarind paste2 tbsp
  • Coconut milk100 ml
  • Palm sugar1 tbsp
  • Saltto taste
  • Wateras needed
  • Kaffir lime leaves3-4

    Prepare the spice paste: Pound or blend lemongrass, galangal, turmeric, shallots, garlic, dried chilies, candlenuts, coriander seeds, cumin seeds, and shrimp paste until smooth. If using a blender, add a little water or oil.

    In a bowl, combine the spice paste with chicken pieces, tamarind paste, coconut milk, palm sugar, salt, and kaffir lime leaves. Marinate for at least 30 minutes, or preferably 2-4 hours in the refrigerator.

    Preheat grill or oven to 200°C (400°F).

    Grill the chicken pieces over medium heat, turning occasionally, until cooked through and nicely charred. Baste with remaining marinade during grilling. Alternatively, bake in the preheated oven for 30-40 minutes, turning halfway.

    Serve hot, garnished with fresh cilantro if desired.
