Bahan
- Mutton (lamb or goat)500 g, cut into 1-inch cubes
- Coconut milk200 ml
- Pre-made Indonesian curry paste (e.g., Kari Ayam paste)4 tbsp
- Lemongrass1 stalk, bruised
- Kaffir lime leaves2 leaves
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Water100 ml

Heat vegetable oil in a pot over medium-high heat. Add the pre-made curry paste and sauté for 2 minutes until fragrant.

Add the mutton cubes and stir-fry until browned on all sides.

Add bruised lemongrass and kaffir lime leaves. Stir well.

Pour in the water and bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes, or until the mutton is tender.

Pour in the coconut milk. Stir and simmer uncovered for another 10-15 minutes until the sauce thickens slightly.

Season with salt and black pepper to taste. Remove lemongrass and kaffir lime leaves before serving.
