- Fresh pineapple, cut into chunks2 cups
- Cucumber, thinly sliced1 cup
- Carrots, shredded1 cup
- Red onion, thinly sliced1/2 cup
- Fresh mint leaves1/2 cup
- Fresh cilantro leaves1/4 cup
- Fish sauce3 tbsp
- Lime juice2 tbsp
- Sugar1 tbsp
- Garlic, minced1 clove
- Chili, minced (optional)1/2 tsp
- Roasted peanuts, crushed1/4 cup

Marinate shrimp with a pinch of salt and pepper.

Grill shrimp until pink and cooked through, about 2-3 minutes per side. Set aside.

In a small bowl, whisk together fish sauce, lime juice, sugar, minced garlic, and chili (if using) to make the dressing. Adjust sweetness and sourness to taste.

In a large bowl, combine grilled shrimp, pineapple chunks, sliced cucumber, shredded carrots, sliced red onion, mint leaves, and cilantro.
