  • Fresh pineapple, cut into chunks2 cups
  • Cucumber, thinly sliced1 cup
  • Carrots, shredded1 cup
  • Red onion, thinly sliced1/2 cup
  • Fresh mint leaves1/2 cup
  • Fresh cilantro leaves1/4 cup
  • Fish sauce3 tbsp
  • Lime juice2 tbsp
  • Sugar1 tbsp
  • Garlic, minced1 clove
  • Chili, minced (optional)1/2 tsp
  • Roasted peanuts, crushed1/4 cup
  • Saltto taste
  • Black pepperto taste
