- Lasagna noodles8 oz, broken into pieces
- Ricotta cheese1 cup
- Parmesan cheese, grated1/2 cup, plus more for garnish
- Egg1 large
- Fresh parsley, chopped2 tbsp

In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off excess fat.

Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.

Pour in the crushed tomatoes, beef broth, and tomato paste. Stir in oregano and basil. Bring the soup to a simmer.

Add the broken lasagna noodles to the simmering soup. Cook according to package directions, usually about 10-12 minutes, until al dente.

While the pasta cooks, prepare the ricotta mixture: In a small bowl, combine ricotta cheese, grated Parmesan cheese, egg, and chopped parsley. Season with salt and pepper.
