- Chicken carcass or bones2 lbs
- Whole chicken1 (3-4 lbs)
- Yellow onion1 large
- Ginger4-inch piece
- Star anise5-6 pods
- Cinnamon stick1 large
- Cloves5-6
- Coriander seeds1 tbsp
- Fish sauce1/4 cup
- Rock sugar1 tbsp
- Saltto taste
- Black pepperto taste
- Water4 quarts
- Dried flat rice noodles (Banh Pho)1 lb
- Fresh cilantro1 bunch
- Green onions1 bunch
- Thai basil1 bunch
- Bean sprouts1 cup

Rinse chicken carcass and whole chicken. Blanch chicken carcass in boiling water for 5 minutes, then drain and rinse. Blanch whole chicken for 2 minutes, then drain and rinse.

Char the onion and ginger: grill or broil until blackened and fragrant. Peel off the charred skin.

Toast star anise, cinnamon stick, cloves, and coriander seeds in a dry pan until fragrant.

Combine chicken carcass, blanched whole chicken, charred onion, charred ginger, toasted spices, fish sauce, and rock sugar in a large stockpot. Add water.

Bring to a boil, then reduce heat to a simmer. Skim off any scum that rises to the surface.

Simmer for at least 2-3 hours, or until the broth is deeply flavorful. Remove the whole chicken after about 45 minutes to prevent overcooking; reserve for slicing.

Strain the broth through a fine-mesh sieve. Season with salt and black pepper to taste.

Cook rice noodles according to package directions. Drain and rinse.

Slice the reserved cooked chicken thinly.

To serve, place cooked noodles in a large bowl. Ladle hot broth over the noodles. Top with sliced chicken, fresh cilantro, green onions, Thai basil, and bean sprouts. Serve with lime wedges on the side.
