A classic and vibrant Vietnamese sweet sticky rice dish, colored and flavored naturally by gac fruit. It's often served during Tết (Lunar New Year) and special occasions for good luck.

- Glutinous rice (sticky rice)2 cups
- Gac fruit pulp1/2 cup
- Coconut milk1 cup
- Sugar1/4 cup
- Salt1/2 teaspoon

- Vegetable oil1 tablespoon
- Toasted sesame seeds1 tablespoon

Rinse the glutinous rice thoroughly until the water runs clear. Soak the rice in water for at least 4 hours or overnight.

Drain the soaked rice. In a bowl, mix the drained rice with the gac fruit pulp, ensuring the rice is evenly coated with the red color. Let it sit for 15-20 minutes.

Steam the rice: Place the colored rice in a steamer basket lined with cheesecloth or a banana leaf. Steam over boiling water for about 30-40 minutes, or until the rice is cooked through and tender.

While the rice is steaming, gently heat the coconut milk, sugar, and salt in a saucepan until the sugar dissolves. Do not boil.

Once the rice is cooked, transfer it to a large bowl. Pour the warm coconut milk mixture over the hot rice and mix gently to combine. Add the vegetable oil and mix again.

Cover the bowl and let the rice rest for about 10-15 minutes to absorb the liquid.

Serve the Xôi Gấc warm. You can mold it into decorative shapes using a small bowl or ramekin. Garnish with toasted sesame seeds.
