- Cooked rice (day-old is best)4 cups
- Eggs3 large
- Garlic2 cloves, minced
- Shallots1, finely chopped
- Fish sauce2 tablespoons
- Soy sauce1 tablespoon
- Vegetable oil3 tablespoons
- Green onions2, chopped
- Saltto taste
- Black pepperto taste
- Cilantrofor garnish

Whisk eggs in a small bowl with a pinch of salt and pepper. Set aside.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just cooked. Remove from wok and set aside.

Add the remaining 2 tablespoons of oil to the wok. Add minced garlic and chopped shallots and stir-fry until fragrant, about 30 seconds.

Add the cooked rice to the wok. Break up any clumps and stir-fry for 3-5 minutes until heated through and slightly toasted.

Pour in the fish sauce and soy sauce. Stir well to combine and coat the rice evenly.

Add the scrambled eggs back into the wok. Stir gently to combine with the rice.

Stir in most of the chopped green onions. Season with salt and pepper to taste.

Serve hot, garnished with the remaining green onions and fresh cilantro.
