  • Full-fat coconut milk400ml
  • Yellow onion1 large
  • Ginger1 piece (5cm)
  • Star anise3 pods
  • Cinnamon stick1 piece (5cm)
  • Cloves4
  • Fish sauce3 tbsp
  • Rock sugar1 tbsp
  • Saltto taste
  • Black pepperto taste
  • Water2.5 liters
  • Fresh cilantro1 bunch
  • Fresh mint1 bunch
  • Lime1
  • Red chilies1-2
  • Bean sprouts100g

    Prepare the broth: Roast the yellow onion and ginger until charred. Rinse chicken bones. Combine bones, roasted onion, ginger, star anise, cinnamon stick, and cloves in a large pot. Add 2.5 liters of water and bring to a boil. Skim off any scum. Reduce heat and simmer for at least 1 hour.

    Poach chicken breast: In a separate pot, add chicken breast and cover with water. Bring to a simmer and cook until cooked through (about 15-20 minutes). Remove chicken, let cool, then shred. Reserve poaching liquid.

    Strain the broth: Strain the simmered broth through a fine-mesh sieve. Discard solids. Return broth to the pot.

    Infuse the broth: Add coconut milk to the strained broth. Season with fish sauce, rock sugar, salt, and black pepper to taste. Simmer gently for 15 minutes to allow flavors to meld. Do not boil vigorously.

    Prepare noodles: Cook dried cassava noodles according to package instructions until chewy. Drain and rinse with cold water.

    Assemble the bowls: Divide the cooked cassava noodles among serving bowls. Ladle the hot coconut broth over the noodles. Top with shredded chicken. Garnish generously with fresh cilantro, mint, sliced red chilies, and a lime wedge on the side. Serve with bean sprouts.
