- Fresh ginger, julienned50g

- Shallots, thinly sliced2
- Fish sauce4 tbsp
- Sugar1 tbsp
- Black pepper1 tsp
- Salt1 tsp
- Vegetable oil2 tbsp
- Water1/4 cup
- Green onions, chopped2 stalks

Cut chicken thighs into bite-sized pieces. Marinate with fish sauce, sugar, minced garlic, half of the julienned ginger, salt, and black pepper. Let it sit for at least 15 minutes.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add sliced shallots and sauté until fragrant.

Add the marinated chicken to the wok and stir-fry until browned on all sides.

Add the remaining julienned ginger and stir-fry for another minute until aromatic.

Pour in the water, bring to a simmer, then reduce heat to medium-low. Cover and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.

Stir in chopped green onions. Adjust seasoning if needed.
