- Chicken thighs, bone-in, skin-on1 kg
- Lemongrass, finely minced3 stalks
- Garlic, minced4 cloves
- Shallots, minced2
- Fish sauce2 tbsp
- Sugar1 tsp
- Black pepper1 tsp
- Salt1.5 tsp
- Cornstarch3 tbsp
- Vegetable oil, for frying1 cup
- Fresh cilantro, for garnisha few sprigs
- Red chilies, sliced, for garnish1

Cut chicken thighs into bite-sized pieces. Marinate with minced lemongrass, garlic, shallots, fish sauce, sugar, black pepper, and 1 tsp salt for at least 30 minutes.

Toss marinated chicken with cornstarch until evenly coated.

Heat vegetable oil in a wok or deep pan over medium-high heat. Fry chicken pieces in batches until golden brown and crispy, about 5-7 minutes per batch. Drain on paper towels.

In a clean wok, add 1 tbsp of oil. Add the remaining 0.5 tsp salt and toast lightly. Add the fried chicken back to the wok and toss quickly to coat with the salt mixture.

Serve hot, garnished with fresh cilantro and sliced red chilies.
