- Chicken thighs1 kg
- Lemongrass3 stalks
- Garlic5 cloves
- Bird's eye chilies5-10
- Fish sauce2 tbsp
- Sugar1 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Vegetable oil2 tbsp

Prepare the marinade: Finely mince lemongrass (white part only), garlic, and bird's eye chilies. Combine in a bowl.

Add fish sauce, sugar, salt, black pepper, and vegetable oil to the minced ingredients. Mix well to form a paste.

Cut chicken thighs into bite-sized pieces. Add chicken to the marinade and toss to coat evenly. Marinate for at least 30 minutes, or preferably 1-2 hours in the refrigerator.

Preheat grill to medium-high heat. Thread chicken pieces onto skewers if desired, or grill directly on the grates.

Grill chicken for 15-20 minutes, turning occasionally, until cooked through and nicely charred.
