- Dried shiitake mushrooms50g
- Scallions (green onions)200g
- Ginger30g
- Garlic2 cloves
- Fish sauce2 tbsp
- Soy sauce1 tbsp

- Black pepper1/2 tsp
- Water1/2 cup

Soak mushrooms: Soak dried shiitake mushrooms in warm water for 30 minutes. Squeeze out excess water, remove stems, and slice caps.

Prepare chicken: Cut chicken into large pieces. Marinate with salt, pepper, fish sauce, soy sauce, minced garlic, and half of the sliced ginger.

Prepare aromatics: Cut scallions into 2-inch sections. Thinly slice the remaining ginger.

Assemble for steaming: In a heatproof bowl, arrange chicken pieces. Scatter sliced mushrooms, scallion whites, and ginger slices over the chicken.

Steam: Place the bowl in a steamer. Steam over medium-high heat for 30-35 minutes, or until chicken is fully cooked.

Serve: Garnish with the green parts of the scallions. Serve hot, spooning some of the steaming juices over the chicken.
