- Canned or pre-cooked lotus seeds200g
- Dried longan50g
- Sugar (granulated or syrup)75g
- Water1 liter
- Salt1 pinch

Rinse the canned lotus seeds if necessary. Soak dried longans in warm water for 10 minutes to rehydrate slightly.

In a pot, combine 1 liter of water, sugar, and rehydrated longans. Bring to a boil and simmer for 10 minutes.

Add the pre-cooked lotus seeds to the pot. Simmer for another 10-15 minutes until the flavors meld.

Stir in a pinch of salt.

Allow to cool. Serve chilled, optionally over ice.
