- Dried lotus seeds100g
- Dried longan50g
- Sugar75g
- Water1 liter
- Coconut milk (full fat)200ml
- Salt1/4 teaspoon
- Toasted coconut flakes (for garnish)2 tablespoons

Soak dried lotus seeds in water for at least 4 hours or overnight. Drain and rinse.

In a pot, combine soaked lotus seeds with 1 liter of water. Bring to a boil, then reduce heat and simmer for about 45 minutes until tender.

Add dried longans and sugar. Simmer for another 15 minutes.

Pour in the coconut milk and stir gently. Heat through for 5 minutes, but do not boil.

Stir in salt to balance the flavors.

Let cool slightly. Serve warm or chilled, garnished with toasted coconut flakes.
