- Jasmine rice, cooked and chilled4 cups
- Salted fish (e.g., Spanish mackerel or croaker), diced1 cup
- Eggs2
- Garlic, minced2 cloves
- Shallots, minced1
- Green onions, chopped1/2 cup
- Carrots, finely diced1/4 cup
- Peas (optional)1/4 cup
- Vegetable oil3 tbsp
- Soy sauce1 tbsp
- Fish sauce1 tsp
- Saltto taste
- Black pepperto taste
- Cilantro, for garnisha few sprigs

Rinse the diced salted fish under cold water to remove excess salt. Pat dry.

Heat 1 tbsp of vegetable oil in a wok or large skillet over medium-high heat. Fry the salted fish until lightly golden and slightly crispy. Remove from wok and set aside.

Add another 1 tbsp of oil to the wok. Add minced garlic and shallots, stir-fry until fragrant.

Push the aromatics to the side. Add the beaten eggs to the wok and scramble them. Break into small pieces.

Add the chilled cooked rice to the wok. Break up any clumps and stir-fry until heated through.

Add the diced carrots and peas (if using). Stir-fry for 2-3 minutes until vegetables are tender-crisp.

Return the fried salted fish to the wok. Add soy sauce and fish sauce. Stir well to combine and coat the rice evenly.

Stir in most of the chopped green onions. Season with salt and black pepper to taste.

Serve hot, garnished with the remaining green onions and fresh cilantro.
