- Pork belly500g
- Star anise2
- Cinnamon stick1
- Garlic3 cloves
- Shallots2
- Fish sauce4 tbsp
- Sugar2 tbsp
- Soy sauce2 tbsp
- Pork rinds (for crispy topping)100g
- Fresh herbs (mint, basil, perilla)1 cup, chopped
- Bean sprouts1 cup
- Lime wedges4
- Chili peppers (sliced)1

Marinate pork belly with fish sauce, sugar, soy sauce, star anise, cinnamon stick, minced garlic, and shallots. Let it marinate for at least 30 minutes.

Boil the marinated pork belly in water until tender. Reserve the broth and slice the pork thinly.

Prepare the crispy pork cracklings by frying pork rinds until puffed and golden, or by frying thinly sliced pork belly until crispy.

Cook Cao Lầu noodles according to package directions. Drain well.

To assemble, place a portion of noodles in a shallow bowl. Top with sliced pork, fresh herbs, bean sprouts, and crispy pork cracklings.

Ladle a small amount of the reserved pork broth over the noodles and toppings. Serve immediately with lime wedges and sliced chili.
