- Rice vinegar1/4 cup
- Lime1

Prepare the pickled vegetables: Peel and julienne the daikon and carrots. Mix with rice vinegar and a pinch of sugar. Let sit for at least 30 minutes.

Marinate the beef: Thinly slice the beef against the grain. Mince lemongrass, garlic, and shallots. In a bowl, combine beef, minced aromatics, 2 tbsp fish sauce, 1 tbsp sugar, 1 tbsp oil, salt, and pepper. Marinate for at least 20 minutes.

Cook the vermicelli noodles according to package directions. Drain and rinse with cold water. Set aside.

Stir-fry the beef: Heat 2 tbsp oil in a wok or large skillet over medium-high heat. Add the marinated beef and stir-fry until browned and cooked through. Remove from wok.

Prepare the nước chấm dressing: In a small bowl, whisk together 2 tbsp fish sauce, 1 tbsp sugar, the juice of 1 lime, and 1/4 cup water. Add minced garlic and sliced chili peppers if using. Adjust seasoning to taste.

Assemble the bowls: In each serving bowl, place a portion of vermicelli noodles. Top with lettuce, cucumber slices, pickled daikon and carrots, and the stir-fried beef. Garnish generously with fresh mint, cilantro, and Thai basil. Sprinkle with crushed peanuts.
