- Dried shrimp50 g
- Dried squid30 g
- Pork loin300 g

- Rice noodles (hủ tiếu)400 g

Rinse pork bones, dried shrimp, and dried squid. Soak dried shrimp and squid in warm water for 30 minutes.

Boil pork bones in water for 10 minutes to remove impurities. Drain and rinse. Place bones in a large pot with 3 liters of fresh water. Add soaked dried shrimp and squid (with soaking water), peeled radish, rock sugar, and a pinch of salt. Simmer for at least 1.5-2 hours to create the broth. Skim off any scum.

While broth simmers, prepare the pork. Slice pork loin thinly. Marinate with a little fish sauce and black pepper.

Prepare seafood. Clean and devein shrimp. Clean squid and cut into rings. Blanch shrimp and squid briefly in boiling water until just cooked.

Mince some pork loin for the minced pork topping. Blanch it in boiling water until cooked.

Strain the broth, discarding bones and solids. Season the broth with fish sauce and salt to taste. Keep the broth hot.

Cook rice noodles according to package directions. Drain and rinse.

To assemble, place a portion of cooked noodles in each serving bowl. Top with slices of marinated pork, blanched shrimp, squid rings, and minced pork.

Ladle the hot broth over the noodles and toppings. Garnish with chopped chives and green onions.

Serve immediately with a side of fresh bean sprouts, lime wedges, and sliced chili.
