Slice beef thinly against the grain. In a bowl, combine beef with 2 tbsp soy sauce, 1 tbsp oyster sauce, 1 tsp sesame oil, 1 tsp cornstarch, and a pinch of black pepper. Marinate for at least 15 minutes.
- 2
Cook egg noodles according to package directions. Drain and rinse with cold water to prevent sticking. Toss with 1 tsp sesame oil.
- 3
Prepare the sauce: In a small bowl, whisk together remaining soy sauce, oyster sauce, cornstarch, and water. Set aside.
- 4
Chop garlic and ginger. Slice onion and red bell pepper. Cut broccoli into bite-sized florets.
- 5
Heat 1 tbsp vegetable oil in a large wok or skillet over high heat. Add marinated beef and stir-fry until browned. Remove beef from wok and set aside.
- 6
Add remaining 2 tbsp vegetable oil to the wok. Add garlic and ginger, stir-fry for 30 seconds until fragrant. Add onion and stir-fry for 1 minute.
- 7
Add broccoli and red bell pepper. Stir-fry for 2-3 minutes until vegetables are tender-crisp.
- 8
Return beef to the wok. Pour the prepared sauce over the ingredients. Stir-fry until the sauce thickens and coats everything.
