- Rice paper (Bánh tráng phơi sương)1 pack
- Pork belly500g
- Fish sauce2 tbsp
- Sugar1 tsp
- Garlic2 cloves
- Shallots1
- Fresh herbs (mint, basil, perilla)1 bunch each
- Vermicelli noodles200g
- Cucumber1
- Saltto taste
- Waterfor steaming

Boil pork belly in water with a pinch of salt until cooked through. Drain and slice thinly.

Marinate pork slices with fish sauce, sugar, minced garlic, and minced shallots. Let sit for at least 30 minutes.

Cook vermicelli noodles according to package directions. Drain and rinse with cold water.

Prepare fresh herbs and slice cucumber.

To assemble, briefly steam or expose rice paper to steam until pliable. Place a piece of rice paper on a clean surface. Layer with vermicelli noodles, pork slices, cucumber, and fresh herbs.

Roll tightly to form a cylinder. Repeat with remaining ingredients.

Serve immediately with a side of nuoc cham (fish sauce dipping sauce).
