Prepare the lemongrass: Trim the tough outer layers and bottom ends of 4-5 lemongrass stalks. Cut them into 6-inch lengths. Pound the cut ends lightly to release aroma.

Prepare the pork mixture: Finely mince shallots and garlic. In a bowl, combine ground pork, minced shallots, minced garlic, fish sauce, sugar, vegetable oil, salt, and pepper. Mix well until thoroughly combined. For a smoother texture, you can process this mixture in a food processor.

Form the skewers: Take a portion of the pork mixture and firmly mold it around the pounded end of each lemongrass stalk, creating a sausage-like shape. Repeat with the remaining pork and lemongrass stalks.

Grill the skewers: Preheat a grill or grill pan to medium-high heat. Grill the nem lụi for about 8-10 minutes, turning occasionally, until cooked through and nicely charred.

Make the peanut dipping sauce: Roast or toast the peanuts until fragrant. Let them cool, then grind them into a coarse powder or paste. In a small saucepan, combine the peanut paste, hoisin sauce, water, and rice vinegar. Simmer gently over low heat until the sauce thickens slightly. Adjust seasoning if needed.

Prepare the accompaniments: Wash and prepare fresh mint, basil, and lettuce leaves. Slice the cucumber thinly.

Serve: Arrange the grilled nem lụi skewers on a platter. Serve immediately with the peanut dipping sauce, fresh herbs, and cucumber slices. Guests can wrap the skewers in lettuce leaves with herbs and cucumber before eating.
