- Lime juice2 tbsp

- Fresh mint leaves1/4 cup

Poach chicken breasts in water with a pinch of salt until cooked through. Let cool, then shred finely.

Thinly slice red onion, carrot, and cucumber. Soak red onion in ice water for 10 minutes to reduce pungency, then drain.

Mince garlic. In a small bowl, whisk together fish sauce, lime juice, sugar, and minced garlic to make the dressing.

In a large bowl, combine shredded chicken, sliced vegetables, mint, and cilantro.
