- Ốc len (mud snails)1 kg
- Coconut milk400 ml
- Lemongrass3 stalks
- Garlic5 cloves
- Shallots2 medium
- Chili peppers2-3
- Vietnamese mint (rau răm)1 bunch
- Fish sauce3 tbsp
- Sugar1 tbsp
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste
- Water100 ml

Clean the snails thoroughly by soaking them in salted water for at least 2-3 hours, changing the water several times, or until they stop releasing mud. Rinse well.

Prepare the aromatics: Finely mince garlic and shallots. Bruise and finely chop the lemongrass. Slice chili peppers.

Heat vegetable oil in a wok or large pan over medium-high heat. Add minced garlic, shallots, and lemongrass. Stir-fry until fragrant.

Add the cleaned snails to the wok. Stir-fry for 2-3 minutes until they start to open slightly.

Pour in the coconut milk and water. Add fish sauce and sugar. Bring to a simmer.

Reduce heat to medium-low, cover, and simmer for 15-20 minutes, or until the snails are cooked through and the sauce has thickened slightly.

Stir in the sliced chili peppers and Vietnamese mint. Cook for another 1-2 minutes until the herbs are just wilted.

Season with salt and black pepper to taste. Serve hot.
