- Coconut water1 cup
- Fish sauce3 tbsp
- Sugar2 tbsp
- Shallots, minced2 tbsp
- Garlic, minced1 tbsp
- Vegetable oil1 tbsp
- Black pepper1/2 tsp
- Salt1/4 tsp
- Water2 tbsp
- Fresh cilantro, for garnish2 tbsp

In a bowl, combine the shrimp with 1 tbsp fish sauce, 1/4 tsp black pepper, and 1/4 tsp salt. Marinate for 10 minutes.

In a separate small bowl, whisk together the coconut water, remaining 2 tbsp fish sauce, sugar, and 2 tbsp water.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced shallots and garlic and sauté until fragrant, about 1 minute.

Add the marinated shrimp to the skillet and stir-fry for 2-3 minutes until they turn pink.

Pour the coconut water mixture into the skillet. Bring to a simmer and cook, stirring occasionally, for 5-7 minutes, or until the sauce thickens and coats the shrimp.
