- Large fresh prawns1 kg
- Beer (lager or pilsner)330 ml
- Lemongrass stalks3 stalks
- Ginger1 piece (about 5 cm)
- Kaffir lime leaves5-6 leaves
- Salt1 teaspoon
- Water1/2 cup

Prepare the prawns: Wash the prawns thoroughly and devein them if desired, leaving the shells on for maximum flavor and moisture.

Prepare aromatics: Bruise the lemongrass stalks by hitting them with the back of a knife and cut them into 2-3 inch pieces. Peel and slice the ginger thinly. Tear the kaffir lime leaves slightly.

Set up the steamer: In a wok or large pot, add the water and beer. Place the lemongrass, ginger, and kaffir lime leaves into the liquid. Bring to a simmer over medium-high heat.

Steam the prawns: Arrange the prawns in a single layer on a heatproof plate or in a steamer basket. Place the plate/basket over the simmering liquid. Cover tightly and steam for 5-8 minutes, or until the prawns turn pink and opaque.

Serve immediately: Carefully remove the plate of prawns from the steamer. Serve hot with your favorite dipping sauce, such as a lime-chili fish sauce or a seafood sauce.
