  • Dried chilies (soaked and blended into paste)10-15

  • Annatto seeds (for color, optional)1 tbsp
  • Vegetable oil4 tbsp
  • Fish sauce3 tbsp
  • Sugar2 tbsp
  • Lime juice1 tbsp
  • Salt1 tsp
  • Black pepper1/2 tsp
  • Cilantro (for garnish)a few sprigs
  • Fresh chilies (sliced, for garnish)1-2

    Prepare the sa tế paste: Sauté minced lemongrass, garlic, and shallots in vegetable oil until fragrant. Add blended dried chilies, chili flakes, and annatto seeds (if using). Cook until the oil turns reddish and aromatic. Strain to get the chili oil.

    Make the marinade: In a bowl, combine 4 tbsp of the prepared sa tế oil with fish sauce, sugar, lime juice, salt, and black pepper. Mix well.

    Marinate the squid: Add the cleaned squid to the marinade. Ensure all pieces are well-coated. Marinate for at least 30 minutes (or up to 2 hours in the refrigerator).

    Grill the squid: Preheat your grill to medium-high heat. Grill the marinated squid for 3-5 minutes per side, or until cooked through and slightly charred. Be careful not to overcook, as squid can become tough.

    Serve: Arrange the grilled squid on a serving platter. Garnish with fresh cilantro sprigs and sliced chilies. Serve immediately.
