- Fresh ginger50g
- Scallions3 stalks
- Garlic3 cloves
- Red chili1
- Fish sauce2 tbsp
- Lime juice1 tbsp
- Sugar1 tsp
- Saltto taste

Clean the squid, remove the beak and ink sac. Cut the body into rings or leave whole if small.

Slice ginger thinly. Chop scallions into 3-inch lengths. Mince garlic. Slice chili thinly.

In a bowl, mix fish sauce, lime juice, and sugar for the dipping sauce. Set aside.

Arrange squid, ginger slices, and scallion stalks in a steamer basket or on a heatproof plate.

Steam over boiling water for 5-8 minutes, or until squid is opaque and tender. Do not overcook.

Garnish with minced garlic, sliced chili, and cilantro (optional).

Serve immediately with the prepared dipping sauce.
