- Pomelo rind (pre-treated or from a jar)1 cup
- Tapioca starch1/4 cup
- Cooked split mung beans1/2 cup
- Coconut milk (full fat)1.5 cups
- Sugar3/4 cup
- Water2 cups
- Salt1/4 teaspoon
- Toasted peanuts (crushed)2 tablespoons

Prepare pomelo rind: If using fresh pomelo, quickly peel and squeeze out pith, then boil for 10 minutes, drain, and squeeze dry. If using pre-treated, rinse well.

Coat pomelo rind: Toss the prepared pomelo rind with tapioca starch until lightly coated.

Make coconut broth: In a pot, combine coconut milk, sugar, and 2 cups of water. Heat gently, stirring until sugar dissolves. Add salt.

Simmer: Add the coated pomelo rind to the coconut broth. Simmer for 10-15 minutes, stirring occasionally, until the rind is tender and slightly chewy.

Serve: Ladle the Chè Bưởi into bowls. Stir in the cooked mung beans. Garnish with crushed toasted peanuts. Serve warm or chilled.
