- Tapioca starch1/2 cup
- Mung beans (split, hulled)1/2 cup
- Coconut milk (full fat)2 cups
- Fresh durian pulp1 cup
- Sugar3/4 cup
- Water4 cups
- Salt1/2 teaspoon
- Fresh durian segments (for garnish)1/4 cup

Prepare pomelo rind: Peel the pith, cut into bite-sized pieces, squeeze out moisture, rinse, soak in salt water for 30 minutes, rinse again, and squeeze dry.

Boil pomelo rind: Boil the prepared pomelo rind in 2 cups of water for 10-15 minutes until tender. Drain and rinse with cold water. Squeeze dry.

Coat pomelo rind: Toss the boiled pomelo rind with tapioca starch until evenly coated.

Cook mung beans: Rinse mung beans. Simmer in 2 cups of water until tender, about 20-30 minutes. Drain.

Prepare durian-coconut broth: In a pot, combine coconut milk, fresh durian pulp, sugar, and salt. Heat gently, stirring until sugar dissolves and durian is well incorporated. Do not boil.

Simmer: Add the coated pomelo rind to the durian-coconut broth. Simmer for 5-7 minutes, stirring occasionally, until the rind is chewy and translucent.

Serve: Ladle the Chè Bưởi with Durian into bowls. Add cooked mung beans. Garnish with fresh durian segments. Serve warm.
