- Almond milk400 ml
- Pandan extract1 tbsp
- Gelatin powder10 g
- Sugar80 g
- Coconut milk300 ml
- Fresh durian pulp100 g
- Water100 ml
- Salt1 pinch
- Fresh rambutan150 g
- Ice cubesas needed

Bloom gelatin powder in cold water.

Heat almond milk with sugar and pandan extract until sugar dissolves. Do not boil.

Add bloomed gelatin to the warm almond milk mixture and stir until dissolved.

Pour into a shallow dish, chill until firm, then cut into cubes.

In a blender, combine coconut milk, fresh durian pulp, water, and a pinch of salt. Blend until smooth.

Gently heat the durian-coconut mixture, but do not boil. Let it cool slightly.

Prepare rambutan by peeling and pitting.

To serve, place pandan jelly cubes and rambutan into serving bowls. Add ice cubes.

Pour the cooled durian-coconut broth over the ingredients. Garnish as desired.
