A richer, more intense version of Cá Basa Kho Tiêu, traditionally cooked in a clay pot (tộ) for a deeper flavor infusion. This variation often includes a touch of chili for a subtle heat.

- Basa fillets600g
- Fish sauce4 tbsp
- Sugar2 tbsp
- Water1/4 cup
- Shallots3 medium, thinly sliced
- Garlic4 cloves, minced
- Black peppercorns1 tsp, coarsely ground
- Red chili pepper1, sliced (optional)
- Cooking oil2 tbsp
- Scallions2, chopped for garnish
- Cilantrosmall bunch, for garnish
- Saltto taste
- Black pepperto taste

Cut basa into thick, 1.5-inch pieces. Marinate with 1 tbsp fish sauce, 1 tsp sugar, salt, and pepper for 15 minutes.

In a separate bowl, mix remaining fish sauce, sugar, water, minced garlic, and ground black pepper.

Heat oil in a clay pot (tộ) or heavy-bottomed pot over medium heat. Add sliced shallots and sauté until softened.

Add the marinated basa pieces to the pot and sear lightly on all sides.

Pour the sauce mixture over the fish. Add sliced chili if using.

Bring to a boil, then reduce heat to low, cover, and simmer for 25-30 minutes, allowing the sauce to thicken and coat the fish.

Stir gently occasionally to prevent sticking. The sauce should become thick and glossy.

Garnish with chopped scallions and cilantro before serving.
