- Basa fillets500g
- Tamarind paste50g
- Pineapple1/4
- Tomatoes2
- Bean sprouts100g
- Okra100g
- Taro stem (bạc hà)100g
- Garlic3 cloves
- Shallots1
- Fish sauce3 tbsp
- Sugar2 tbsp
- Chili1
- Culantro (ngò gai)1 bunch
- Cilantro1 bunch
- Vegetable oil2 tbsp
- Water1.5 liters
- Saltto taste
- Black pepperto taste

Prepare the tamarind broth: Soak tamarind paste in hot water, mash, and strain to get the juice. Discard solids.

Cut basa fillets into bite-sized pieces. Marinate lightly with salt and pepper.

Chop garlic and shallots. Slice tomatoes into wedges. Cut pineapple into bite-sized pieces. Slice okra diagonally. Chop taro stem into bite-sized pieces.

Heat oil in a pot. Sauté garlic and shallots until fragrant.

Add tomatoes and cook until softened.

Pour in the tamarind juice and water. Bring to a boil.

Add fish sauce and sugar. Season to taste.

Add taro stem and pineapple. Cook for 5 minutes.

Add okra and bean sprouts. Cook for another 2-3 minutes until vegetables are tender-crisp.

Gently add the marinated basa pieces. Simmer for 3-5 minutes until the fish is cooked through. Do not overcook.

Stir in chopped culantro and cilantro. Add sliced chili if desired.
