  • Chay squash (winter melon)500g
  • Fresh shrimp200g
  • Garlic2 cloves
  • Fish sauce1 tbsp
  • Vegetable oil1 tbsp
  • Water1.5 liters
  • Saltto taste
  • Black pepperto taste
  • Scallions2 stalks
  • Cilantroa small bunch

    Peel and deseed the chay squash, then cut into 2-inch cubes.

    Peel and devein the shrimp. Marinate with a pinch of salt and pepper.

    Mince garlic.

    Heat vegetable oil in a pot over medium heat. Sauté minced garlic until fragrant.

    Add the shrimp and stir-fry briefly until they turn pink. Remove shrimp and set aside.

    Pour in water and bring to a boil.

    Add the chay squash cubes to the boiling broth. Simmer for 15-20 minutes, or until tender.

    Return the cooked shrimp to the pot. Add fish sauce and season with salt and pepper to taste. Simmer for another 2 minutes.
