- Fish sauce3 tbsp
- Sugar3 tbsp
- Ketchup2 tbsp
- Rice vinegar2 tbsp
- Water1/4 cup
- Vegetable oil2 tbsp
- Scallions2 stalks
- Red chili1
- Saltto taste
- Black pepperto taste

Cut pork ribs into bite-sized pieces. Marinate with 1 tbsp fish sauce, 1 tsp sugar, salt, and pepper for at least 30 minutes.

Mince garlic and shallots. Chop scallions and chili for garnish.

Heat vegetable oil in a wok or large skillet over medium-high heat. Sear the marinated pork ribs until browned on all sides. Remove ribs and set aside.

In the same wok, sauté minced garlic and shallots until fragrant.

Add the remaining fish sauce, sugar, ketchup, rice vinegar, and water to the wok. Stir well to combine and bring to a simmer.

Return the seared pork ribs to the wok. Reduce heat to medium-low, cover, and simmer for 20-25 minutes, or until the ribs are tender and the sauce has thickened.
