- Whole chicken1.5 kg
- Lemongrass3 stalks
- Garlic5 cloves
- Shallots2 medium
- Galangal1 inch piece
- Turmeric powder1 tsp
- Fish sauce3 tbsp
- Honey1 tbsp
- Chili peppers2-3
- Salt1 tsp
- Black pepper1/2 tsp
- Vegetable oil2 tbsp

Prepare the marinade: Finely mince lemongrass (white part only), garlic, shallots, and galangal. If using fresh turmeric, grate it. Chop chili peppers.

In a bowl, combine minced aromatics, turmeric powder, fish sauce, honey, chopped chili peppers, salt, and black pepper. Mix well.

Clean the chicken and pat it dry. Make several deep slits in the chicken to allow the marinade to penetrate.

Rub the marinade all over the chicken, ensuring it gets into the slits and cavities. Marinate for at least 1 hour, or preferably overnight in the refrigerator.

Preheat grill to medium-high heat. Lightly oil the grill grates.

Grill the chicken, turning occasionally, for about 45-60 minutes, or until cooked through and the skin is golden brown and slightly charred. Baste with any remaining marinade or oil during grilling.
