- Whole chicken1.5 kg
- Coarse sea salt1 kg
- Star anise5-7 pods
- Black peppercorns1 tbsp
- Lemongrass stalks2 stalks
- Ginger1 inch piece
- Garlic cloves4 cloves
- Lime leaves3 leaves

Rinse the chicken and pat it dry. Stuff the cavity with bruised lemongrass, sliced ginger, garlic cloves, and lime leaves.

In a bowl, mix coarse sea salt with whole black peppercorns. If desired, add a few star anise pods to the salt mixture.

Generously coat the entire chicken with the salt mixture, ensuring it's fully covered. Pack the salt firmly around the chicken.

Preheat oven to 180°C (350°F).

Place the salt-crusted chicken on a baking sheet lined with parchment paper. You can also wrap it in foil before placing it on the baking sheet for easier cleanup.

Bake for approximately 1.5 to 2 hours, or until the chicken is cooked through. The internal temperature should reach 75°C (165°F).

Remove from oven and let it rest for 15 minutes. Carefully crack and remove the salt crust.
