- Fried tofu cubes200g
- Fermented tofu paste (mẻ)2-3 tablespoons
- Shallots, minced2 tablespoons
- Garlic, minced1 tablespoon
- Turmeric powder1 teaspoon
- Fish sauce3 tablespoons
- Sugar1 teaspoon
- Chili peppers, sliced (optional)1-2
- Dill, chopped1/4 cup
- Scallions, chopped2 tablespoons
- Water2 cups

Prepare the green bananas: Peel the bananas, cut them into 2-inch pieces, and immediately soak them in salted water to prevent browning. Drain before cooking.

Marinate the catfish: Cut the catfish into 2-inch pieces. In a bowl, mix the fish with 1 tablespoon of fish sauce, 1/2 teaspoon turmeric powder, minced shallots, minced garlic, and a pinch of black pepper. Let it marinate for at least 20 minutes.

Prepare the stew base: In a pot, combine the fermented tofu paste with 1/2 cup of water and stir until dissolved. Add the remaining fish sauce, sugar, and the rest of the turmeric powder. Bring to a simmer.

Add the ingredients: Gently add the marinated catfish pieces and the drained green banana pieces into the simmering broth. Add the fried tofu cubes. If using, add the sliced chili peppers.

Simmer the stew: Cover the pot and simmer over medium-low heat for about 30-40 minutes, or until the catfish is cooked through and the bananas are tender but still hold their shape. Stir gently occasionally to prevent sticking.

Finish and serve: Stir in the chopped dill and scallions. Taste and adjust seasoning with salt if needed. Serve hot, ideally with steamed rice.
