  • Garlic, minced4 cloves
  • Shallots, thinly sliced1/4 cup
  • Sugar1 tbsp
  • Vegetable oil2 tbsp
  • Fresh mint leaves1/2 cup
  • Fresh cilantro leaves1/2 cup
  • Roasted peanuts, chopped1/4 cup
  • Cucumber, julienned1/2
  • Bean sprouts1 cup
  • Lime wedges4
  • Saltto taste
  • Black pepperto taste

    Thinly slice pork shoulder against the grain. In a bowl, combine pork with 2 tbsp fish sauce, minced lemongrass, minced garlic, shallots, sugar, salt, and pepper. Marinate for at least 30 minutes.

    Cook vermicelli noodles according to package directions. Drain and rinse with cold water. Set aside.

    Heat vegetable oil in a wok or large skillet over medium-high heat. Add marinated pork and stir-fry until cooked through and slightly caramelized, about 5-7 minutes. If the pan becomes too dry, add a splash of water.

    To assemble, place a portion of vermicelli noodles in each serving bowl. Top with the stir-fried pork. Garnish generously with fresh mint, cilantro, chopped peanuts, julienned cucumber, and bean sprouts.
