- Firm tofu400g
- Ground pork200g
- Tomatoes300g
- Shallots2 tbsp, minced
- Garlic1 tbsp, minced
- Fish sauce2 tbsp
- Sugar1 tsp
- Vegetable oil2 tbsp
- Scallions2 stalks, chopped
- Cilantrofor garnish
- Saltto taste
- Black pepperto taste
- Water1/2 cup

Cut tofu into 2-inch cubes. Carefully cut a pocket into each cube, being careful not to cut all the way through.

In a bowl, mix ground pork with minced shallots, garlic, 1 tbsp fish sauce, sugar, salt, and pepper. Mix well.

Stuff the pork mixture into the tofu pockets.

Heat vegetable oil in a pan over medium-high heat. Pan-fry the stuffed tofu until golden brown on all sides. Remove and set aside.

Puree or finely chop the tomatoes. Sauté the remaining minced shallots and garlic in the same pan until fragrant.

Add the tomatoes to the pan and cook until they break down and form a sauce. Stir in the remaining fish sauce, sugar, salt, and pepper.

Return the fried tofu to the pan. Add water, bring to a simmer, cover, and cook for 15-20 minutes, or until the tofu is cooked through and the sauce has thickened.

Garnish with chopped scallions and cilantro before serving.
