Classic Vietnamese sweet fried doughnuts, crispy on the outside and chewy on the inside, coated in sesame seeds and often filled with mung bean paste. A beloved traditional dessert.

  • Glutinous rice flour2 cups
  • All-purpose flour1/4 cup
  • Sugar1/4 cup
  • Salt1/2 teaspoon
  • Warm water3/4 cup
  • Vegetable oilfor frying
  • White sesame seeds1/2 cup
  • Mung bean paste (sweetened)1 cup

    In a large bowl, combine glutinous rice flour, all-purpose flour, sugar, and salt. Gradually add warm water and mix until a soft, pliable dough forms. Knead for 5-7 minutes until smooth.

    Divide the dough into 12 equal portions. Flatten each portion, place about 1 tablespoon of mung bean paste in the center, and carefully wrap the dough around it, sealing completely. Roll into a smooth ball.

    Roll each ball in white sesame seeds, pressing gently to adhere.

    Heat about 2-3 inches of vegetable oil in a wok or deep pot over medium heat to 320°F (160°C).

    Carefully fry the doughnuts in batches, about 3-4 at a time, for 5-7 minutes, turning occasionally, until golden brown and puffed up. The oil temperature should be maintained.

    Remove the doughnuts with a slotted spoon and drain on paper towels. Let cool slightly before serving.
